Zombie Pancakes

Fall is one of my favorite times of the year, not only because it's my birthday season (Scorpio's ROCK), but I truly love Halloween.  I've always been a fan of dressing up and eating candy, so it's a given that it's my favorite holiday.  Plus, growing up, my parents always went the extra mile.  My mother would make our costumes and decorate the house to the 9's.  Trick or treating was always an adventure that began with us driving to our grandparents to show off our costumes and then ultimately hitting the sidewalks en masse.  I have such great memories of these years, which can be classified by costumes: Fruit of the Loom grapes, a bridesmaid, a southern belle, a punk rocker, and of course a pumpkin well beyond the point of being a cute pumpkin. Sistilia, my sweet daughter, I promise you I will not make you dress like a pumpkin during puberty. Mom, I forgive and love you.

 

 

 

One of the best parts of Halloween is sharing it with the kids in your life, we tail-gate all October long over here.  I obsess over making my babes costume or having my talented friends do it . I love decorating the house with the kids, having halloween dance parties, watching the baby-friendly classics, and of course cooking spooky and scary treats (and that doesn't have to be limited to ghost cupcakes or witch cookies - get breakfast in on the action with my totally delicious but creepy looking zombie pancakes)!  I absolutely LOVE these and so do the kids!   And the best part, they are super easy.  I've included my pancake recipe, which is low on sugar and high on moist fluff, BUT you can make these with store-bought pancake mix - all you need are blueberries and a touch of simple syrup.

 

 

 

 

 

And these aren't just for the kids. They are truly delicious and a fun treat for anyone who loves the ‘season of the witch!’

What Do I Need?

Pancake Mix

1 1/2 Cups of Flour

1 t Baking Powder

1 t Sugar

1 Cup Milk

1 Egg, beat well

1 t melted butter

 

Zombie Goo

8 Ounces of Blueberries (I used 6 in the video and you can see they are still blue, but I like mine a little deeper, so use 8 if you can)

1 T Sugar

1 T Hot Water

Butter for pan + more for serving

 

 

 

 

 

Now What?

In a large bowl, sift the flour, baking powder, sugar and salt. Form a well in the center and add the milk and egg. Whisk until smooth, then add the melted butter and mix a bit more. Set aside.

 

In a small bowl, mix 1 tablespoon of sugar with 1 tablespoon of hot water. Mix well until the sugar is resolved, set aside.

 

Place 3/4's of your blueberries in a small/ medium saute pan over medium heat, stirring and gently pressing on them to help them deconstruct. After about 3 minutes, carefully pour in your sugar-water mixture. Continue to stir and blend until your mixture become a bit like a lumpy syrup. This should take 4 - 10 minutes, depending on the freshness of your blueberries.

 

 

 

When your berries are done, remove from heat and allow them to cool for about 10 - 15 minutes. Add them to your pancake batter. Toss in 1/4 of your berries that you set aside and mix well until your batter is a kind of zombie grey! 

 

Next, heat your griddle or a nice iron skillet - or whatever you like - to make your pancakes!  Butter it up really nice and cook your cakes. I use a 1/4" cup for each cake and flip them after about 2 minutes per side.

 

You can serve with butter and syrup, but I eat these babies just like they are. They are moist, naturally sweet and delicious, and so fun to look at. Results may vary, but are better when consumed by those in costume!
